Notes

  • -  Interview with Easter Benson, owner of E & A Soul Food Restaurant.
  • -  Summary of audio segment: At restaurant she serves: biscuits, cornbread, macaroni and cheese, sweet potato pie, cakes, pinto beans, lima beans, candied yams, vegetable soup, field peas, potato salad, cabbage, string beans, and meat, we have baked turkey, barbecue spare ribs, barbecue beef ribs, pork chops, steak, turkey. Whatever, just name it we have it. We even have sausage and pepper, spaghetti, we sometimes make a pan of lasagna -- but that doesn't sell well, mostly here is soul food -- stewed chicken, fried chicken, barbecue chicken, baked chicken. All of it is common food. "And it's very high seasoned. That's what makes it soul food."
